Banana and chocolate chunk muffins

Ingredients
175g / 6oz unsalted soft butter
100g / 4oz brown sugar
175g / 6oz self raising flour
3 large free range eggs
3 very ripe bananas
125g / 5oz chocolate chips or chocolate chopped into big chunks

Preheat oven at 175 c 
In a mixing bowl cream the butter and sugar together until light and fluffy
Add the flour
Then add the eggs. Mix well but do not over mix.
Next mash the banana and bash the chocolate - chuck in and mix till evenly spread through the mixture.
Place the mixture into about 12 good size muffin cases.
Pop in the oven for about 18 minutes or until golden. If testing with a knife the knife must come out clean other wise pop back for another couple of minutes.

Delicious Rocky Road Recipe!

This is the most delicious and yet simple non bake recipe for rocky road.... We used to sell 1-2 trays a day in the parlour.

Ingredients
240g chocolate ( today I used 2 blocks of cadburys dairy milk)
100g digestive biscuits
20g raisins
80g marshmallows( mini ones or chop up large ones)

Melt the chocolate in the microwave ...

Break up biscuits with a rolling pin - kids will love to do this!

Add biscuits, marshmallows and raisins and stir. Do not over stir as the chocolate can look very dry.

Line a 7inch square tray with greaseproof paper and push mixture in.

Pop in the fridge for an hour.

Take out of tin and slice up... Dust with icing sugar.

And in my house gone in minutes!!

Making perfect buttercream

Ingredients:
250g soft butter
500g icing sugar
Splash of milk
Teaspoon of vanilla extract/ paste

Method
Cream the butter until soft then add the icing slowly ( I use a kitchen aid but you can use a hand mixer or use a wooden spoon)
Once all the icing is mixed in use a splash of milk to loosen the buttercream and then add the vanilla.
I always use a disposable icing bag... Snip off the end and pop a nozzle in the end! Star shape works well for buttercream swirls.
Starting from the outside of the cupcake squeeze the bag and work anti clockwise working your way around to the inside as pictured!
Practise makes perfect with buttercream .... This should cover about 12-16 muffin size cupcakes... Now decorate !!!
