Half Term Vanilla Cupcakes To Make With Children

Most children love to bake or at least should be taught to don't need to be a master chef to have fun and enjoy making an after tea also gets them away from the tv for an hour or so!

I chose a very simple Vanilla sponge recipe and vanilla buttercream...

For the sponge recipe :

250 g softened unsalted butter
250g  caster sugar
250g self raising flour
5 medium free range eggs
2 teaspoons vanilla extract
splash full fat milk.

All ingredients should be left out the fridge for a while. Cream butter and sugar together until light in colour and fluffy.Then add eggs and flour do not over mix just until the ingredients are brought together.
Line tin with 24 cases (muffin size if your having a cake may as well be a good size one!)
Seperate the mix between the 24 cases and then pop into the oven.
180 oc for about 20 minutes or until golden and fluffy and when pressed will pop back up.

Whilst cooling down make the buttercream

250g softened butter unsalted
500g icing sugar
2 teaspoons vanilla extract.

I have a kitchen aid so i chuck everything into it and let it beat it until light and fluffy...or you can do it by hand with lots of elbow grease!

Once ready either add the buttercream to a bag and nozzle (here the children used a star nozzle) but you can scoop and swirl it on with a palette knife.

Then decorate until your hearts content  my children used coloured and flavoured buttons from silver spoon (orange and strawberry ) which are delicious...
