The Best Lemon Meringue Cupcake Recipe !!

This has to be the nicest cupcake ever!! If you like lemon meringue pie you will love this...
The recipe is Simon Rimmers (so thank you )
What you need:
100g butter
100g sugar
1 teaspoon vanilla extract
2 free range eggs
100g self raising flour
1 lemon zest only
75g lemon curd

for the meringue :
2 free range egg whites
100 g sugar

1, preheat the oven at 180 o
2, cream the butter, sugar,and vanilla
3, add the eggs and then flour and lemon zest.
4, fill tin with 12 cake cases. put spoon of mixture in each one
5, before they go into the oven put a spoonful of lemon curd on top of each one!
6, pop in the oven for about 15 - 20 minutes until golden brown and spring back
7, once out the oven pre heat the grill.
8, whisk the egg whites and sugar together until they form peaks
9, pop a swirl of meringue mix onto of each cupcake and put under the grill for about 2-3 minutes until they start browning slightly
10, enjoy!!!

GIVEAWAY !!!!!

I'm excited to have been asked by http://www.csnstores.co.uk/ to review some of their products which I was thrilled about. The website is beautiful loads of products I now want on my wish list..but I chose 2 to review...
I chose a beautiful set of measuring cups and to review them thought my youngest children could get in on the action we made some yummy chocolate chip cookies and have included the recipe here...
you will need:
3/4 cup of caster sugar
3/4 cup of soft brown sugar
1 cup butter
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups plain flour
1 teaspoon baking powder
1 cup choc chips

Preheat the oven 180 ,
Mix all the dry ingredients if you have a mixer use the dough hook this can easily be done by hand.then add the butter and then the eggs. Give a good mix
Finally mix all the choc chips in by hand
Place on a greased baking sheet or put greaseproof paper on. And bake for 10 minutes the cookies should still be soft and slightly golden around the edges..leave on the sheet to cool or you'll end up with a heap of mess!!!   Then enjoy

Marry Me Again.....!!!! How We Got Here

I met my husband Richard when I was 17 and he was 23.. after a couple of months we got engaged and a month later I turned 18 and we brought our first house.

 In 1998 Emily arrived she was a gorgeous baby and so chilled with thick dark hair which later turned blonde. When Emily was 2 Charlie arrived and we planned our wedding. Charlie was born with cerebral palsy and it was a really difficult time. We got married on 18th August 2001. It was a lovely day but we had a lot of worry with charlie at this time. Then in 2004 Sophie arrived we had a c section because of the difficult birth I had with Charlie. She came into the world 3 weeks early and loudly which should of been a sign of things to come....Shes very vocal !! Next to join our family was max he arrived in 2006 also by c section he was our quiet little baby.The baby that you could take any where and would be happy to sit quiet peacefully, that was until he turned 20 months. At this point I had our 5th baby which was William who was a little monkey from the moment he arrived . Max was having a lot of issues at this point which came over night it was like he woke up a different child and never changed back. We had a dreadful time and as a mum i knew something wasn't right after a long process max was diagnosed with learning difficulties, autism and has hearing aids in both ears.
So here we are in 2011 and this year is our 10th wedding anniversary (and 15 years together)so as a surprise for Richard I decided to book to renew our wedding vows (18th August)and luckily when I asked him he said yes. We've come such a long way through some very tough times and think it may have broke many couples up so this day is a way of us showing our children and each other we've got through it and that it made us stronger and still love each other.
You would never choose these things to happen to you but actually I feel like it made me a better mummy I appreciate every little thing my children do and am very proud of them all xxxx

BMW Cupcakes

 I was asked by Bluebell BMW in Crewe to make 50 cupcakes for the launch of their new 6 series convertible. Of course I said YES PLEASE!!! very excited.
 I made the cupcakes in vanilla sponge with a vanilla buttercream. Thought the cupcakes would look best in a silver case with blue edible glitter. I had the toppers printed onto edible sugar paper.
Very pleased with how they came out.......

Busy baking week some of the cakes I made...

Its been such a busy week and at one point I could have done with more hours in the day..but luckily managed to finish all the cakes in time...
Unfortunately this week the memory card in my camera broke and so there were some cupcakes which went out that I didn't manage to get photos of.... here's the ones I did.

40 cupcakes for a 40th birthday these had musical notes, guitars and rugby balls and were in the flavours, lemon, palma violet, rocky road, red velvet and white chocolate with rosewater buttercream..yummy!
So as well as these cakes I made Sophies birthday cakes and cupcakes 5 boxes of carrot cupcakes, anniversary cupcakes and birthday cupcakes for a mum...so sorry I was unable to take these photos!!

SOPHIES 7th BIRTHDAY

This week has been bonkers....had lots of cupcakes and cakes to make(at one point worrying that I was running out of time)Also it was Sophies birthday Saturday so she had her order in for her cake already...and she had lots of ideas. Her party was held at Frankie and Bennys in Stafford and she had a great time...thank you to the waitress who had to look after 13 children!!
So after coming up with lots of ideas she finally settled on Hello kitty with matching cupcakes....
This is a 6 inch vanilla sponge with lots of vanilla buttercream inside....we saved this for home and the cupcakes were given out at the party.
And this is sophie blowing out her candles....she had a lovely day thank you to all her friends that shared her day and to everyone who brought her all her beautiful presents she was very lucky !!
