Home Made Tomato Soup Recipe

Today i made a home made tomato soup which is always a great hit with all my children. Its easy,quick, healthy and yummy with crusty buttered rolls.
55g/2oz butter
1 onion finely chopped
700g/1lb 9oz tomatoes chopped
Salt and Pepper
600ml/1 pint  vegetable stock
50ml single cream
pinch basil
pinch parsley

1.Melt the butter in a large pan add the chopped onion and cook on a low heat for 5 mins,stir occasionally
2.Add the tomatoes season with salt and pepper and cook for 5 mins
3. Pour in the stock return to hob and boil reduce heat cook for 10 minutes.
4. Put the soup into a blender until all the lumps have gone.
5. Return to the saucepan and stir in cream, and herbs, heat but do not boil.... serve with crusty bread...enjoy!
